Today we spotlight Jeanetta Sullivan, (Mompreneur) Owner of PUDGY POTATO Home of the XTRA LOADED BAKED POTATO.
All my life I grew up watching great cooks in my family bless others in the community with good home cooked meals from my Great grandmother Lucinda to my Dad, Aunts, Uncles, Cousins etc. It's (cooking) in our blood! Owning and running a restaurant has always been a family dream. Growing up I didn't have the latest or best of materialistic "things" as I grew older I always looked for a way to help myself financially from braiding hair at age 12 up until I graduated high school and went on to nursing school. Since I was a child, I always said I wanted to be a nurse so even as an adult that was still on my to-do list. However, now that I'm working in my childhood profession it wasn't enough, as much as I LOVE being a nurse I still feel like I have more to offer to the world! It was November, 2017 when I planned to drop my son off at daycare and upon arriving was told there's no longer daycare services. After a short lived pity party, I drove to the market and gathered everything needed for an XTRA LOADED BAKED POTATO, soon to become PUDGY POTATO! I don't really remember where I got STUFFING baked potatoes from, I've always loved the traditional loaded potatoes (cheese sour cream chives). For about 5 years I've made them as a dinner dish for family and friends and they've always encouraged or joked about making them for purchase. I can remember putting my son in his play pen praying over my groceries then prepping to make my first batch of XTRA LOADED potatoes. I made chicken, steak, and shrimp and 10 potatoes I remember making one of each making a video of the finished product then tasting each one... they were beyond delicious! I uploaded my XTRA LOADED potatoes sent mass text messages out to everyone in my phone XTRA LOADED BAKED POTATOES for sale!!!! The first week I made a $100 less than my 40hr work week check, it was a HIT!!! That month and the next month the numbers was consistent enough that 4 months later I considered taking this new exciting "whole meal" all in one POTATO gig to the next level. I started researching and found POTATO factories all over the country Georgia, Houston, Dallas, Detroit, Baltimore & these are big successful some even franchises all specializing in POTATOES! I instantly started studying EVERYTHING about them I've been in communication with a few they really believe in Buffalo potential and stands behind PUDGY POTATO. I researched any POTATO factories in Buffalo (none), WNY (none), New York State (none) after countless hours of researching, networking, and preparing a business plan etc. March 2018, I switched to DBA PUDGY POTATO; Home of the XTRA LOADED BAKED POTATO! A year later PUDGY POTATO has proven to be not just a hustle but worthy enough to work as a full-time business. PUDGY POTATO now has 20 different varieties and counting (chicken, steak, shrimp, taco, lobster, seafood, Mexican, chili, pizza, buffalo chicken, breakfast potatoes variety, sweet potato variety etc.) to enjoy. This year be prepared to see PUDGY POTATO at pop-up shops major festivals & city wide events, PUDGY POTATO is a kitchen/cooking made to order restaurant/catering service.
